A Kitchmus (HEY! It's MY blog, OK!?!) Story This is the story of a very trying kitchen experience. It all started in the spring when Maliavale was confirmed. (I said confirmed. Not committted.) She made this awesome quiche. It had a lot of my favorite things in it, including mushrooms and spinach and feta cheese. Mmmm. It was so tasty, I asked for the recipe. Then I messed with it. Five eggs? Wow. How about I just use Egg Beaters. Done. Half a cup of spinach? Naaaaw. Let's use the whole box! Won't that be fun? Done! And I nixed the crust because I was trying to cut the calories. But guess what happened? I took all the taste out of it. And there was too much spinach. It was OK, but nothing like Malia's. I vowed to make it again sometime when someone else who liked all those things was around. What about my husband, you ask? Well. He doesn't eat many vegetables. And especially not spinach or mushrooms. So this week, there was a potluck at work one night. So I decided I was going to try the quiche again. I even had pie crust. But I couldn't find the recipe. I had it just the other day. Where could it have possibly gone? I figured, eh. How hard could it be? I'll just wing it. I looked at the directions on the pie crust (WHY would you make it yourself?) and figured I needed to bake the crust first. Why I decided that, I'll still never really know. While the crust baked, I sauteed the mushrooms and thought to myself, "This is going to be FANtastic." The the eggs -- I used four eggs and a couple eggs' worth of Egg Beaters for good measure. I tossed in the correct amount of spinach this time. (From what I could remember anyway.) Some feta, salt, pepper and some garlic powder and viola. Quiche mixture. I took the pie crust out of the oven and started lining the crust with them. Then I wondered, well, if the crust is already cooked, what's going to happen when I have to bake it again? Yeah. That's my genius showing through. Fortunately... pie crust? Comes in packs of TWO. So. I take out the mushrooms. And wonder what to do with the cooked crust. I kinda needed that pie plate because it's the deepest one I have. Don't want any overflows in the oven. So I grabbed the crust and tossed it into another pie plate, plopped the new one in the old (HOT) pie plate and started trying to "flute the edges." Not so easy with hot crust. Then I poured in the egg mixture. But wait! CRAP. The mushrooms are supposed to go in first. Meeeeeeeep. But I figured what difference does it make? I'll just toss them in and push them to the bottom. I topped it off with some tomato (not in the original recipe) and feta cheese and put it in the oven on like 425. I figued I'd bake it for about 30 minutes. It'd been in the oven for about 25 minutes when I finally just called Maliavale. HELP, Malia. Yeah, turns out it's supposed to bake at 425 for 15 minutes and then at 325 for 40 minutes. WHO KNEW. Meanwhile, I told her that I was thinking of her and Nabbalicious because I had this empty baked pie crust just sitting on the counter staring at me. And they have an affinity for crust and doughs. Even unbaked. I really had no idea that anyone would ever 1. eat bread dough or 2. actually like it until I met those two. Now, in case you're interested, here's the real recipe. It's good, I promise, when made the right way. I figure I have one more try till I'm out. Spinach and feta quiche 5 eggs (or equivalent Egg Beaters) 1/3 c. milk Feta (about half a typical box size) 1/2 c. Spinach, maybe half a cup? Mushrooms, enough to cover the bottom of the pie crust (or pie pan if you don't use crust) Pie crust Salt and pepper Parsley Saute the mushrooms in a little olive oil spray, just so they're soft. Line the bottom of the crust with them. Mix up the eggs and milk, then add the feta and spinach, and the spices to taste. Pour over mushrooms. Bake at 325 for about 40 minutes. (This is what my mom said, but it's always taken me a little longer, though that could be my oven.) To change up the quiche, cut up turkey or ham and put it on the bottom. (Just deli-sliced turkey.) Add a half-cup cheese on top of that, then a half-cup mixed with the egg mixture. You can add whatever you think would taste good! Edited to add: I'm such a dork because I just checked my e-mail save file. The recipe is in there. I had it the whole darned time. Sigh.

HAHAH. I love that you pasted that right from my e-nail, including the note about my mom.

I would also like to point out that if you are going to use turkey (or ham) and cheddar, I would take out the spinach, feta and mushrooms. I feel I didn't make that clear enough.
